el amaranto<\/strong>, sus propiedades, sus beneficios y tambi\u00e9n, c\u00f3mo emplear esta semilla en la cocina.<\/p>\n<p><strong>Las propiedades del amaranto<\/strong><\/p>\n<\/div>\n<p><!--more--><\/p>\n<div class=\"itemFullText\">\n<p>El\u00a0<strong>amaranto<\/strong>, tal como la quinoa, es considerado un pseudocereal, pues posee caracter\u00edsticas similares a los cereales pero con algunas cualidades que destacan tales como su contenido proteico, que es m\u00e1s semejante al de las legumbres.<\/p>\n<p><a href=\"http:\/\/sian.inia.gob.ve\/repositorio\/revistas_ci\/Agronomia%20Tropical\/at5201\/art\/jacobsen_s.htm\">Se ha determinado<\/a>\u00a0que el grano de amaranto concentra entre\u00a0<strong>16 y 17% de prote\u00ednas<\/strong>\u00a0que poseen casi todos los amino\u00e1cidos esenciales para el organismo, excepto la leucina, que ser\u00eda el amino\u00e1cido limitante en este alimento.<\/p>\n<p>Adem\u00e1s, es fuente de\u00a0<strong>buenas grasas<\/strong>\u00a0de las cuales concentra aproximadamente un 7% y posee una elevada proporci\u00f3n de fibra, as\u00ed como de minerales entre los que destaca el calcio, potasio, magnesio y f\u00f3sforo, seg\u00fan\u00a0<a href=\"http:\/\/bases.bireme.br\/cgi-bin\/wxislind.exe\/iah\/online\/?IsisScript=iah\/iah.xis&amp;src=google&amp;base=LILACS&amp;lang=p&amp;nextAction=lnk&amp;exprSearch=234580&amp;indexSearch=ID\">se ha encontrado<\/a>\u00a0en un an\u00e1lisis.<\/p>\n<p>Asimismo, resulta una buena fuente de vitaminas del complejo B y de compuestos fen\u00f3licos con poder antioxidante, tal como\u00a0<a href=\"https:\/\/www.researchgate.net\/profile\/Inga_Klimczak\/publication\/11270716_Antioxidant_activity_of_ethanolic_extracts_of_amaranth_seeds._Nahrung-Food\/links\/02e7e53ba78af79906000000.pdf\">ha sido estudiado<\/a>.<\/p>\n<h2>Beneficios del amaranto<\/h2>\n<p>Por todas las propiedades anteriormente dichas, el amaranto puede incorporarse a la dieta para diversificar la misma y agregar buenos nutrientes, sobre todo, puede ser\u00a0<strong>de utilidad en quienes llevan una alimentaci\u00f3n vegana<\/strong>\u00a0y buscan prote\u00ednas de origen vegetal de alta calidad.<\/p>\n<p>Sus antioxidantes\u00a0<a href=\"http:\/\/www.sciencedirect.com\/science\/article\/pii\/S0023643811001277?np=y\">han demostrado<\/a>\u00a0su poder para neutralizar los radicales libres del ox\u00edgeno, por lo que, la ingesta de amaranto puede\u00a0<strong>reducir el estr\u00e9s oxidativo<\/strong>\u00a0y as\u00ed, ayudar al cuidado de cada c\u00e9lula del organismo y su salud.<\/p>\n<p>Adem\u00e1s, por su contenido en buenas grasas, en fibra y en\u00a0<strong>fitoesteroles<\/strong>, el consumo de amaranto podr\u00eda ser de ayuda para\u00a0<strong>prevenir enfermedades cardiovasculares<\/strong>\u00a0al controlar dislipemias y valores de presi\u00f3n arterial, tal como\u00a0<a href=\"http:\/\/lipidworld.biomedcentral.com\/articles\/10.1186\/1476-511X-6-1\">ha sido investigado<\/a>.<\/p>\n<p>Por otro lado, puede ser un buen recurso para incrementar la\u00a0<strong>saciedad<\/strong>\u00a0de la dieta, ya que en reemplazo de arroz o pastas, el amaranto puede usarse como buena fuente de fibra y prote\u00ednas que calma el hambre y el apetito con mayor facilidad sin ofrecer un extra de calor\u00edas, por lo que, tambi\u00e9n puede ser de utilidad cuando buscamos\u00a0<strong>perder peso<\/strong>.<\/p>\n<p>No s\u00f3lo eso, sino tambi\u00e9n, para\u00a0<strong>dar variedad a la alimentaci\u00f3n<\/strong>\u00a0habitual incorporando un alimento con buenas propiedades y grandes beneficios.<\/p>\n<h2>Usos del amaranto en la cocina<\/h2>\n<p>Por ser un pseudocereal, el amaranto\u00a0<strong>puede usarse tal como usar\u00edamos el arroz<\/strong>, es decir, podemos hervirlo para elaborar ensaladas, guisados u otras preparaciones, tanto fr\u00edas como calientes, saladas o dulces.<\/p>\n<p>Pero tambi\u00e9n, podemos usar el amaranto directamente sobre el fuego en una sart\u00e9n para obtener\u00a0<strong>palomitas de amaranto<\/strong>, en reemplazo de palomitas de ma\u00edz, obteniendo as\u00ed un snack con muchas m\u00e1s prote\u00ednas y fibra.<\/p>\n<p>Asimismo, la semilla de amaranto puede emplearse como tal,\u00a0<strong>sin someter a cocci\u00f3n<\/strong>, para agregar textura crujiente a un empanado o una ensalada o bien, para\u00a0<strong>elaborar barritas de cereales con esta semilla o galletas crujientes<\/strong>\u00a0si mezclamos chocolate con amaranto \u00fanicamente.<\/p>\n<p>Como podemos ver, con\u00a0<strong>amaranto<\/strong>\u00a0podemos lograr variedad de preparaciones que ampliar\u00e1n la variedad de nuestra dieta y sumar\u00e1n buenos nutrientes y grandes beneficios a la
